French Macaron Recipe Calculator & Macarons For Sale!

I'd like to tell myself that I did something cool today...

A few years ago, my obsession with French Macarons made me insane.  I was on a college budget. Ingredients were not cheap (I'm looking at you, almonds), and I lacked patience and finesse.  I made a lot of maca-wrongs in 2010 (.. well from 2010 - now I have made so many macawrongs it's really sad).  I've been making them on and off since... but nothing serious and with very little success (DAMN YOU HOLLOWS).

Recently, this obsession has been rekindled.  Especially after seeing all these macaron shops pop up and seeing them all over the fricken internet.   Now I've got all the tools that should make macaron-baking easier (Kitchenaid, silpats, piping bags, ingredients).

If there's one thing that I wished was easier, it was quickly calculating how much almond flour and powdered sugar I would need depending on how much egg whites I had.

I noticed that 2 eggs whites from various brands and sizes of eggs could vary from weighing approx. 50 grams total, up to 80 grams.  That's quite a bit difference, and will drastically affect the turnout of your recipe if you do not alter the amount of your dry ingredients in turn.

So.... I made a public Google sheet :)

Depending on how much egg white you have on hand, the other amounts for the almond flour, powdered and granulated sugar will self populate.  I honestly don't know why I didn't think of this sooner!

A good macaron will be smooth on top, with little feet (not too tall, not overly protruding), and most importantly, NOT HOLLOW.

There are NUMEROUS macarons from professionals and hobbiests alike that look GREAT when photographed, but are hollow.  Hollowness completely takes all the macaron awesomness out of a macaron.

Like this one. This mac looks pretty decent. Was hollow (not entirely hollow, but enough to suck). Fail.

I am now a firm believer in that if you are going to share mac recipe, provide mac tips, sell macs, you better be able to produce a non-hollow mac.  One can dream.

Troubleshooting your hollows is, unfortunately, a battle you will have to fight on your own because no one, over the internet, can definitively (with 100% confidence) tell you what you're doing wrong.  For me, it was a combination of underfolding the batter, underbaking and too low of a baking temperature.  I would sometimes get overly ambitious, try to flavor my shells too heavily with things like dehydrated strawberries, excess cocao powder... so stick with gel/powdered food coloring for color and depend on your filling and aging the macs for full flavor.   With experience and through trial and error, you'll begin to discover what is making YOUR macarons, macawrongs.

You will need quite a bit of time, patience, $$ (for wasted ingredients.. and your valuable time, sorry) and someone who will hopefully not be too shallow to eat your failed macs.

I'm back! With an IPSY Review!

Greetings, blogosphere!

Yes, I'm still around!  I recently started a new job and there's a huge learning curve for me... so guess you know how I've been spending my time :)

I got my frist IPSY bag in February 2014.  I didn't take photos of the first bag since I wanted to go a few months before posting a review.. but.. it's my second bag and I'm already thoroughly satisfied.

I've already dug into the Chella liner-- it's AMAZING.  Very similar to Dolly Wink in control of tip-- but instead of being a brush, it's felt and super easy to use for precision eye lining.  My only minor complaint is that I got blue instead of black.. less professional but I'll still use it.  I think I'll be picking up a black one of these babies!  

The NYX shadows are great.  Per usual. No surprises.  Have yet to try the lip color and PIXI primer... tomorrow I shall try these :)

He Qi Winter 2013 Collection!

With the new pup in the house, we are busy busy busy!  Life's been full of doggie training sessions... and can't forget to keep our kitties happy as well! 

I carved out some time over the last few weeks to develop a Winter 2013 collection... my focus wasn't on Holiday colors or anything, but more of a classic style that can be worn in and out of the office, parties, nights out.  Versatile, overall neutral pieces. 

Serena came out quite lovely.  I've had a vision for a necklace of this type of a while-- I'm wearing it to work today and it's perfect!
Personally I don't often wear necklaces, but when I do, they are simple and comfortable to wear.  I'm finding Serena to be just that.

Taking the Color of the Year (Emerald), I strung it on a simple chain with little silver accents-- Jaded Emerald!


Classic Fleur De Lis clasp finishes this simple SWAROVSKI cream pearl and bicone bracelet.  Very dainty piece!


"3" was the main theme of our triple chainmaille twist earrings! Three rings for each twist designs, 3 links. Pretty!

Simple and elegant-- these teardrop dangles are perfect for a night out or the office!


Last but not least, I wanted to make some earrings that match our necklace which was worn on the Vampire Diaries...
These aren't as office friendly, but definitely great for a night out.

October Happenings!

Hello world!  We're still alive and well.  The last few months have been a whirlwind of personal activity.

One of the most exciting being... Brian and I adopted a dog!

Meet Frey:

She's approx. 10 months-1 year old, and we adopted her from the Sacramento County shelter.  Overall lovely gal.  Since she was taken in by the shelter as a stray, no history or anything, so all training is starting anew, and that has kept us quite busy!


Our days go something like this:
5 - 5:15 AM I get up, walk or jog the dog till 6 - 6:15.  She gets water, goes in kennel (we are crate training her) while I'm getting ready for work.  At 6:50 we go to the backyard, she does her business and we play some games until 7:05.  Leave for work.  Either Brian or I come back during lunch to give her another play session, and then we back for good around 5, and she gets her second walk, at least half hour.  She's learning to walk on a leash for the first time.  She has great innate manners, definitely needs rules, boundaries & limitations.  The idea is that if we can fulfill her dog needs first (exercise, discipline, affection), we can then fulfill our human needs of having an awesome companion.  So far, a little difficult because she's older and has already formed some opinions, but we are being patient and going to obedience classes starting next Sunday.

The cats are adjusting well to the dog.  Dog really wants to play with kitties, but kitties are definitely way less enthused.  But the entire pack (humans, felines and canine) can all be in the same room and nap together, so I'm calling this one a win.

In other news, He Qi had the opportunity through The Artisan Group to submit a jewelry piece to be considered for use on the Vampire Diaries.... and crazy enough, the piece was used on Season 5, Episode 2!!! CRAZY. AWESOME.  Never though this could happen!
